This is a super easy and fairly quick meal. Especially tasty on cold days or a nice addition to a summer BBQ. It's definitely a hit with my family!
What you need:
1 lb of ground beef or ground turkey
1 tsp of cumin
1/2 tsp of garlic powder
3/4 cup of Pace® Picante Sauce
1 cup of Four Cheese Pasta sauce
1 can of whole kernel corn, drained
1/2 cup of shredded Cheddar cheese
1/2 package of cream cheese, approx 4oz (optional)
1 package of corn muffin mix
1 1/2 tsp of honey
- Preheat oven to 375 degrees Fahrenheit
- Cook meat, garlic powder, and cumin in skillet until browned. Drain fat. Add picante sauce, pasta sauce, and corn. When hot, stir in Cheddar and cream cheeses. Once cream cheese is fully mixed, pour into 2 quart shallow baking dish. Mix corn muffin mix according to package directions, adding 1 tsp of honey. Spread over meat and sauce mixture. Drizzle the remaining 1/2 tsp of honey on top of corn muffin mixture.
- Bake 25-30 minutes or until cornbread is golden brown
